A focus on Graham Squire, a 20-year-old chef from Portsmouth, who will represent the UK at the international showcase for vocational skills, the WorldSkills 2007 event in Japan.

Graham's skills are highly rated by his employer, Claridges Hotel in London, and are on display during a typical shift in the restaurant. He explains how to chop vegetables quickly, how to prepare beef fillet for 300 people, and how you must always taste the water you are going to boil things in.

He travels to Omero Galluci's restaurant in Crawley where he gets a master class in preparing pasta, stuffing gnocchi with parmesan and bacon, and serving it with fresh scallops. Graham shows how he marries long hours in the kitchen with an intensive coaching regime designed by his UK Skills training manager Peter Joyner.
